Chicken Sausage Sandwich


This is a quick and yummy sandwich last time I had made a open potato sandwich so this time I taught of making something with the sausages. Its a quick & yummy recipe with minimum ingredients.


Ingredients:
Brown bread - 6 slices
capsicum - 1 large
chicken sausage - 6 cut in small rounds
tomato paste - 2 to 3 tbs
cheese - 1 cup grated
salt and pepper - to taste
oil


Method:
Preheat the oven at 180 degrees for 10 minutes

Heat some oil in a skillet add capsicum just stir fry for a minute now add the sausages add little salt and pepper cook for 2 to 3 minutes switch off the flame.

Grease the grilling tray with some oil place the bread apply the tomato paste on each bread now add a spoonful of the sausage and capsicum mixture. Add grated cheese and grill until cheese melts or the top layer becomes light brown.

While making it in a pan:
Heat some oil or butter in a pan prepare the sandwich as above and place in the pan cover and cook until cheese melts. Be careful the flame should be low to avoid burning.

Enjoy with some ketchup or green chutney.

Chickpea cutlet/ Veggie Burger with desi sauce

Wanted to take a break from the normal cooking of curries, rice....So taught of making burger for dinner I know it sounds weird a Burger for dinner but folks this is the only time where we can peacefully sit and enjoy the meal and hubby dear too enjoys it. Keeping the toddler in mind i taught of making a healthy patty with loads of carrots and some spinach. I also made a desi sauce and it complemented the patty very well I highly recommend it to all as its low calorie and very healthy. Folks do try it and you will surely fall in love with the complete package.



Ingredients for Chickpea patty:


Chickpeas - 400gm boiled and coarsely grinded
potato - 2 medium sized boiled and grated
carrot - 1 medium sized grated
spinach - 4 to 5 leaves roughly chopped
onion - 1finely chopped
cumin seeds (jeera) - 1/4 tsp
ginger garlic paste - 1/2 tbs
green chilli - 2 finely chopped
freshly chopped coriander - handful
amchur powder - 1/2 tsp
turmeric- 1/2  tsp
red chilli powder - 1 tsp
garam masala powder - 1 tsp
dhaniya jeera powder - 1 tsp
salt - to taste

To shallow fry:
Maida (All purpose flour) - 2 tbs
Bread crumbs - 1 cup
oil

Method:
Heat oil in a cooking vessel add jeera along with onions and green chilli, ginger garlic paste cook for a minute then add salt and turmeric after few seconds add red chilli powder, dhaniya jeera and garam masala powder once the raw smell vanishes add half of grated carrot and half of chopped spinach cook until they become soft now add the coarsely grinded chickpeas and grated potatoes,amchur powder and chopped coriander mix it properly and cook it for a few minutes. Add salt if required.
Once cool then apply little oil on your palm and make round tikkis.

For frying take a bowl add maida along with little water make a thin paste. (little thinner than dosa batter ). heat oil in a frying pan dip each patty in the flour paste then in the bread crumbs and shallow fry until crisp brown. Drain on a kitchen towel. Enjoy with tomato chilli garlic sauce.

Now the same cutlet can be used in the Burger.

Desi sauce:

Ingredients:
Thick yoghurt - 1 cup
carrot - 1 small grated
spinach - 2 leaves roughly chopped
salt - to taste
black pepper - a pinch
sugar - 1 tsp

Method:
Whisk the curd add remaining carrots and spinach used in the chickpea patty along with sugar, salt and pepper mix well and chill in the refrigerator.

Assemble:
Slightly toast the burger buns now apply little mayonnaise and tomato garlic chilli sauce then some lettuce, onions and tomatoes add a spoonful of desi sauce and the patty or any cutlet cover the bun and enjoy.

P.S. The quick desi sauce can be used in sandwiches or any wraps specially for kids as its healthy and yummy.

Open Potato Cheese Sandwich

It was love at first sight with this recipe. This recipe is adapted from Kanchan's blog http://personaltadka.blogspot.com. I have blindly followed her recipe and the end results were too too good. Get to make a good heavy breakfast only on Fridays as its weekend here and we enjoyed the sandwich to the core.Here goes the recipe.

Ingredients:
Potatoes boiled  - 2 medium size
capsicum  chopped - 1 large
onion chopped - 1
green chilli - 1 to 2
coriander chopped - handful
lettuce - 5 to 6
bread - 6 slices
butter - 2 tbs
cheese - 1 packet grated around 200gm
salt and pepper - to taste

Method:
Mash the potatoes add capsicum,onion,chopped coriander, green chilli, salt and pepper.
Toast and butter the bread slices.

Assemble:
Arrange the bread slices place the lettuce and potato stuffing add the grated cheese.
Push them in the oven and grill until cheese melts.
Enjoy with tomato ketchup and tea.

Vegetable Sandwich

A simple quick vegetable sandwich. There are endless varieties of sandwiches and would love to make them but this time I taught of going for the basic sandwich recipe.

Ingredients:
White bread slices - 4
onion - 1 medium sliced
tomato - 1 medium sliced
cheese slices - 2
butter - 2 tbs
salt - to taste
crushed black pepper - 1 tsp

Green chutney
Ingredients:
fresh coconut - 1 cup grated
green chilli - 2
fresh coriander - handful
mint leaves (pudina) - 1 spring
ginger - 1"
curd - 1 tbs
roasted bengal gram (chana dal) - 1 tbs
salt - to taste

Method:
Butter the bread, apply green chutney to the bread slices place the onion, tomatoes along with the cheese slices sprinkle some salt and black pepper and enjoy with hot hot chai!

Chutney:
Grind all the in ingredients under green chutney. ( If required add very little water ).
The chutney can be stored in the refrigerator.

Enjoy the sandwich with some ketchup and hot masala tea.

P.S. Guys I dint have potatoes in the house otherwise boiled potato and beet go well with this sandwich.

Pizza

I have already uploaded a recipe of pizza but as I said in the earlier post I love eating it so I always try to make it in a different way. I hope you like it.

Ingredients
Large Pizza base -2
tomato paste - 50ml (I used ready made)
mix herbs - 1 to 2 tbs
olive oil or any normal cooking oil - 2 to 3 tbs
veggies - I used mushrooms,corn kernels and capsicum - 1 cup
onion diced - 1
tomato chopped in medium sized chunks - 1
Salt to taste
pepper to taste
Mozarella and cheddar cheese grated- 1 cup ( I love cheese so if 1 cup is more then please use as per the required qty)

Preheat the oven to gas mark 4 for 15 min


Start assembling
take the large base, apply some olive oil then add the tomato paste and spread it over on the base along with the mixed herbs. Then add the onion, mushrooms, corn, tomatoes and finally add the capsicum. Now add the cheese sprinkle some salt, pepper and herbs along with olive oil. And proceed for baking.


Bake the pizza on gas mark 5 for 10min or until the cheese melts.


Enjoy with tomato ketchup!!

Vegetable Pizza

Weekend means having lots of fun with my little angel & lots of talking with hubby. And of course preparing some of the favorite food for the family. So this weekend thought of making the family favorite Pizza. Whenever I visit India my brother (Chetak) & sis in law (Priya) insists that I make Pizza for them so this post is dedicated to both of them. And how can I forget the latest addition in our family my darling niece Sanavi. Love you.
 I mostly prefer using ready made base as it goes handy for working women & I am no different. But i have also tried making the dough at home & it was a super hit. I had followed Madhurasrecepi to make yeast free pizza base.


Ingredients:
Pizza base - 2 ( large )
Capsicum cubed - 2 medium size
Cabbage shredded  - 1/2 cup
mushroom sliced -   1/2 cup
onions cubed - 2 medium sized
tomatoes roughly chopped - 1 large
corn - 1/2 cup 
salt - As per taste
Black pepper powder - As per taste
Pizza masala - 1 tsp (Easily available in any grocery shop
Pizza sauce - Depends on the size of the base)
cheese - Mozzarella cheese 250 gm
chopped garlic - 1 tbs

Non Veg Eaters
Can use boiled and shredded chicken or sliced sausages as toppings.



Method:
 Heat oil in kadhai ( cooking vessel ), add chopped garlic, onion let the onion fry for a minute keep the flame high after 2 min add tomato, mushrooms, corn, fry for sometime then add Capsicum and Cabbage at last. Remember the veggies should be fried on a high flame as they should be crunchy and NOT soggy.At this point add salt, pizza masala & pepper powder.After 3 to 4 min switch off the gas.

Apply the pizza sauce on the base add a bit of cheese (this step of adding cheese now is optional but it gives a nice texture). Add all the viggies sprinkle pizza masala grate generous amount of cheese and put in the oven or make it on a tava with a closed lid.
Enjoy with tomato ketchup.
Gas Oven:
Preheat oven on gas mark 4 for 15 min.
Bake the pizza on gas mark 5 for 10 min.


Tawa (Chapati or Dosa Pan):
Heat the pan & apply a little butter & gently place the pizza on the pan. Cover the pizza for the cheese to melt for 5 to 8 min. Please check the pizza to avoid the base from burning. ( cook on medium heat )

Tip: 
Apply little oil on the edges of the pizza base before putting in oven. If u have olive oil it wld be gr8 but if not then our normal cooking oil will also do.
