Prawns Pulao

First of all Ramadan Kareem to all my Muslim blogger friends..Here in Kuwait we have office for 6 hrs during this month I wish this holy month brings lot of peace and happiness in our lives. OK now coming to the recipe I don't think there is anyone who makes better prawn pulao then my mother but this time I gave her a tough competition. It was tasting almost the same like hers...We enjoyed it with fried Tilapia and some onion tomato raita.

Ingredients:
Prawns - 500gm
Rice - 11/2 cup
onion - 2 medium sized chopped
tomato - 1 large chopped
green chilli - 2 slit
ginger garlic paste - 1 tbs
garlic cloves - 5 to 6 crushed
curry leaves - 1 spring
whole garam masala - 3 to 4 pepper corns, 3 cloves, 1small stick cinnamon & 2 green cardamom
cashews - 8  to 10
red chill pwd - 1/2 tbs
turmeric - 1tsp
garam masala pwd - 2tsp
pulao or biryani masala - 2 tsp
goda masala - 1 1/2 tbs (optional)
coriander - chopped
salt - to taste
oil

Method:
First marinate the prawns with salt, 1/2 tbs ginger garlic, little turmeric and 1/4 tsp of garam masala pwd. keep in the refrigerator for minimum 30min.

Wash the rice thoroughly drain and soak for 15 minutes. Heat oil in a pressure cooker add whole garam masala once they splutter add curry leaves,crushed garlic and slit green chilli. Now add onion just after 1 min add the remaining ginger garlic paste lower the flame. cook until onion becomes soft add cashews, red chilli pwd, turmeric,garam masala pwd, pulao masala sprinkle some water so that the powders don't burn. Cook for a minute now add tomato with some salt once the tomato is semi cooked add the goda masala and mix it properly. Once oil leaves add prawns mix and cook for 1 minute now add rice with 3 cups of water. Close the cooker lid with weight. Cook on medium flame. Cook for 1 whistle simmer for 3 to 4 minutes and switch off the flame . Once all pressure is released garnish it with freshly chopped coriander and serve hot with fried fish and raita.

Prawns in coconut gravy (Kolambiche saar)

My husband just loves prawns and the most fav is Kolambi Bhaat made by my mom. Some how I don't find them that interesting. He just loves prawns in any form. This recipe is one of his favorite and would like to share with you all.


Ingredients
Prawns - 1 cup cleaned and washed
Fresh coconut - 1 1/2 cup grated
coriander seeds - 2 tsp
red chilli - 4 to 5 (depends on the spice intake) soaked in water for 15 min
red chilli powder - 1 tsp
tomato - 1 medium
cumin seeds - 1/2 tsp
garlic - 6 to 7 cloves crushed
curry leaves - 1 spring
ginger - 1"
turmeric - 2tsp
Kokam - 3 to 4 ( you can use little tamrind as a substitute to kokam )
water - to grind
salt - to taste
oil - tempering

Method:
1. Take a bowl add the prawns along with 1 tsp of turmeric and salt and keep in the fridge for 15 to 20 min
2. Grind together fresh coconut, coriander seeds, cumin seeds, remaining turmeric, red chilli, red chilli powder, tomato, 2 garlic cloves, ginger, salt and little water to a fine paste. ( taste and check for salt or spice add if needed according to your required taste)
3. Now heat oil in a kadhai add the curry leaves and crushed garlic and immediately pour the above paste and close the lid. Just after 2 minutes open the lid add water and let it boil now add the prawns and let it cook do not cover the vessel. Prawns do not take much time to cook when they are almost done add the kokam or tamrind and switch off the gas.
Enjoy with steamed rice and fried fish. Yummy.

Salmon fry ( Ravas fry)

Ingredients for marination
1 medium size Salmon (Ravas) cut in slice asper your choice
Kokum 4 to 5 they are very sour so be carefull ( is made from a fruit which is known as Garcinia indica in english & Raatamba in marathi,Ginger, Garlic & Coriander leaves paste
Red chilli powder
Turmeric Powder
Generous amount of salt

Method:
Take all the above ingredients mix them and apply on the fish nicely inside out and marinate the fish atleast for 1hr.

Ingredients for frying:
Oil
Rice flour
semolina
red chilli powder

Method:
Mix the above mixture except for oil and roll the fish in it and fry it on both sides be carefull that it dosen't burn.(Salmon takes a bit long time for frying).
